1. The basics were answered in the mini course, but let us delve a little deeper!

2. Where you live will greatly affect the quality of your water for both drinking and for kombucha. These two activities (drinking and brewing) can be different. For example, my beautiful city of Santa Monica has decided recently to add fluoride to its water supply. This might be a benefit for drinking (though that is controversial), but it is definitely not something you want in your water for preparing your sweet tea.



3. Rule One: Boil Your Water for 10 minutes

4. Rule Two: If you do not boil your water (as in the Quick Cool Down Method): Use Distilled water. Distilled water is water purified through distillation. Distillation involves boiling the water and re-condensing the steam into a clean container, leaving most if not all solid contaminants behind. (Thanks Wikepedia).

5. What about Spring Water? Hey I have a Brita, can I use that? Sure, if you are going to be boiling the water for 10 minutes. Otherwise, stick to Distilled.

6. The exception to this rule is if you have a reverse osmosis system (usually these are reserved for commercial use).
