QUESTION:
My friend is a recovering alcoholic and must not ingest even a trace amount of alcohol.
Alcohol boils at about 176 deg Fahrenheit, so my question is, would heating just prior to bottling harm our Kombucha Tea?

ANSWER:Hi Robert,
People recovering from alcoholism, along with anyone who prefers not to have any alcohol in their system, obviously have to make a personal decision whether or not to drink kombucha.
To put things in perspective, an odouls (non alcohol beer) has more alcohol than the avg kombucha tea.
In fact, on the flip side, people drinking kombucha tea have reported no longer the craving for alcohol and have broke the addiction to it..
In my opinion this is due to the fact that kombucha is an astringent and sends signals to the body that you no longer need an astringent taste.
This would then also explain why those that drink a small glass of kombucha in the morning no longer have the need to drink a cup of coffee.
Anyway, heating the kombucha over a low heat should remove most of the alcohol, however it will also remove most of the beneficial bacteria found in raw unpasteurized kombucha tea.
It will still be a very healthy viable beverage filled with beneficial yeast, organic acids and minerals so the choice is really up to you.
