The Basics
The words Masala Chai literally translates to Spiced Tea. Masala chai can be prepared in many different ways. However, we suggest the following method:

Combine all of your ingredients, except the milk, at once (tea, spices, water, sugar), and then bring to a boil. Then turn down the heat and slowly add your milk (we suggest whole milk), and let simmer for an additional 5 minutes.

The prolonged high heat results in a much more robust beverage than the relatively delicate flavors obtained from other tea preparation methods, which usually steep tea leaves in hot (but not boiling) water which is allowed to cool to room temperature.

There are as many different Masala Chai recipes as there are families in India. Feel free to experiment with your own unique preparations. To get you started here are some of our favorite variations:

Substitute white sugar with brown sugar for more of a spiced, richer taste.

Prepare the tea without any milk and make very strong (3 to 4 times as strong). Let cool and refrigerate. Then add milk when ever you want a "Chai Latte". The tea should keep for a week.

Though our Masala Chai is blended with real, whole herbs such as Cinnamon Bark, Ginger, Cardamom, and Sweet Cloves, experiment with adding a little Black Pepper, Licorice, Almonds, and Chocolate.
