Is Fizz a Good Indicator of Healthy Kombucha?

Today I would like to discuss a question that came in regarding the fizz as a good indicator for healthy kombucha. This is a very different question from the general title I get the fizz because I prefer the taste of it.

So I guess we need to first define what healthy Kombucha means. To me, healthy Kombucha should first be broken down into two parts: healthy Kombucha Tea and a healthy Kombucha culture.

Healthy Kombucha tea is tea that represents all the nutritional characteristics of Kombucha tea. So in addition to beneficial, tannins, flavonoids, catechins, polyphenols, and antioxidants (which is found in various degrees in all tea), healthy Kombucha tea also contains beneficial yeasts, bacteria, and organic acids (glucoronic being the most talked about lately).

A healthy Kombucha culture is a culture that continues to either grow in size and/or thickness or produces another layer of culture (commonly and affectionately called a baby), on top. A healthy culture should also produce healthy Kombucha tea. So in this example one feeds the other (talk about a circle of life -take that Lion King!). Now eventually a culture will reach a stage where it does need to be discarded - so the idea that a culture lasts forever, is true in the concept that it will produce offspring (there's that baby word again), so that the concept of culture should withstand the test of time. Understanding this definition of how we define healthy Kombucha, fizz is not a good indicator of whether or not your Kombucha is healthy. However, it is a good indication of balance between your yeast and bacteria. That and also, it does tend (in my opinion and the majority of others) improve the enjoyment and taste of your tea. This in return, will motivate the Brewer to continue brewing and enjoying this beneficial elixir.

So even though fizz is not the best indication of healthy Kombucha tea or a healthy Kombucha culture, it is still very important to have the knowledge of achieving this characteristic if desired.



So previously I spoke that healthy Kombucha tea has yeast, bacteria, and organic acids. To achieve a fizzy Kombucha brew, one of the major things to focus on is maintaining an equal balance between the yeast and bacteria. In future articles I will show you in detail the steps to take to ensure this balance.
